Grilled Eggplant Burgers

Ingredients:

-2 medium-sized eggplants
-1/2 cup breadcrumbs
-1/4 cup grated Parmesan cheese
-1 teaspoon garlic powder
-1 teaspoon onion powder
-1 teaspoon dried oregano
-1 teaspoon dried basil
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1/4 cup olive oil
-4 hamburger buns
-Toppings of your choice (lettuce, tomato, onion, etc.)

Instructions:

1. Preheat the grill to medium-high heat.

2. Slice the eggplants into 1/2-inch thick rounds.

3. In a shallow bowl, mix together the breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, basil, salt, and pepper.

4. Brush the eggplant slices with olive oil on both sides.

5. Dip the eggplant slices into the breadcrumb mixture, coating both sides.

6. Place the eggplant slices on the preheated grill and cook for 3-4 minutes per side, or until golden brown and cooked through.

7. Place the cooked eggplant slices on the hamburger buns and top with your favorite toppings. Enjoy!
