Grilled Eggplant Burgers
Ingredients:
-1 large eggplant, sliced into 1/2 inch thick rounds
-1/4 cup olive oil
-1 teaspoon garlic powder
-1 teaspoon onion powder
-1 teaspoon smoked paprika
-1 teaspoon dried oregano
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-4 hamburger buns
-Toppings of your choice (lettuce, tomato, onion, etc.)
Instructions:
1. Preheat your grill to medium-high heat.
2. In a small bowl, mix together the olive oil, garlic powder, onion powder, smoked paprika, oregano, salt, and pepper.
3. Brush the eggplant slices with the olive oil mixture.
4. Place the eggplant slices on the grill and cook for 3-4 minutes per side, or until they are tender and lightly charred.
5. Toast the hamburger buns on the grill for 1-2 minutes.
6. Assemble the burgers by placing the eggplant slices on the buns, then topping with your desired toppings.
7. Serve and enjoy!
