Grilled Eggplant Burgers
Ingredients:
- 2 large eggplants
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup minced fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons olive oil
- 4 hamburger buns
Instructions:
1. Preheat the grill to medium-high heat.
2. Slice the eggplants into 1/2-inch thick slices.
3. In a medium bowl, mix together the bread crumbs, Parmesan cheese, parsley, garlic, oregano, basil, salt, and pepper.
4. Brush the eggplant slices with olive oil on both sides.
5. Dip the eggplant slices into the bread crumb mixture, coating both sides.
6. Place the eggplant slices on the preheated grill and cook for 5-7 minutes per side, or until the eggplant is tender and golden brown.
7. Place the cooked eggplant slices on the hamburger buns and serve. Enjoy!
