Grilled Eggplant, Squash, and Tomato Skewers

Ingredients:

- 1 large eggplant, cut into 1-inch cubes
- 1 large squash, cut into 1-inch cubes
- 2 large tomatoes, cut into 1-inch cubes
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 tablespoons chopped fresh herbs (such as basil, oregano, or thyme)

Instructions:

1. Preheat the grill to medium-high heat.

2. In a large bowl, combine the eggplant, squash, and tomatoes. Drizzle with the olive oil and season with salt and pepper.

3. Thread the vegetables onto skewers, alternating between the eggplant, squash, and tomatoes.

4. Place the skewers on the preheated grill and cook for 8-10 minutes, turning occasionally, until the vegetables are tender and lightly charred.

5. Remove the skewers from the grill and sprinkle with the chopped herbs. Serve warm. Enjoy!
