Grilled Fish Fillet with Halloumi and Tomato
Ingredients:
- 2 fish fillets
- 2 eggs
- 2 tomatoes
- 4 ounces halloumi cheese, cut into cubes
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat a grill or grill pan to medium-high heat.
2. Place the fish fillets on the grill and cook for 4-5 minutes per side, or until the fish is cooked through.
3. Meanwhile, in a medium bowl, whisk together the eggs and season with salt and pepper.
4. Heat the olive oil in a large skillet over medium heat.
5. Add the halloumi cubes and cook for 2-3 minutes, or until golden brown.
6. Add the tomatoes and cook for an additional 2-3 minutes.
7. Pour the egg mixture into the skillet and stir to combine.
8. Cook for 3-4 minutes, or until the eggs are cooked through.
9. Serve the grilled fish fillets topped with the halloumi and tomato egg mixture. Enjoy!
