Recipe Name: Grilled Lemon Herb Chicken with Roasted Vegetables

Ingredients:
- 4 boneless, skinless chicken breasts
- 1 lemon, juiced and zested
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- Cooking spray

Instructions:
1. In a small bowl, whisk together the lemon juice, lemon zest, minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper.
2. Place the chicken breasts in a shallow dish and pour the marinade over them. Make sure the chicken is well coated. Cover and refrigerate for at least 30 minutes.
3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
4. Grill the chicken breasts for about 6-7 minutes per side, or until they are cooked through and have nice grill marks. Make sure the internal temperature reaches 165°F (74°C).
5. While the chicken is grilling, prepare the vegetables. Toss the mixed vegetables with a little olive oil, salt, and pepper.
6. Place the vegetables on a baking sheet lined with foil and roast in a preheated oven at 400°F (200°C) for about 15-20 minutes, or until they are tender and slightly caramelized.
7. Once the chicken is done, remove it from the grill and let it rest for a few minutes before slicing.
