Grilled Panais and Tomato Skewers with Tzatziki
Ingredients:
- 2 large panais, peeled and cut into 1-inch cubes
- 2 large tomatoes, cut into 1-inch cubes
- 1 cup tzatziki
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions:
1. Preheat the grill to medium-high heat.
2. In a medium bowl, combine the panais cubes, tomato cubes, olive oil, salt and pepper. Toss to combine.
3. Thread the panais and tomato cubes onto skewers.
4. Grill the skewers for 8-10 minutes, turning occasionally, until the vegetables are tender and lightly charred.
5. Serve the skewers with the tzatziki. Enjoy!
