Grilled Potato and Mushroom Salad
Ingredients:
- 2 large potatoes, peeled and cut into 1/2-inch cubes
- 1 cup sliced mushrooms
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 tomato, diced
- 1/2 teaspoon freshly ground black pepper
- 1/2 cucumber, diced
- 1/2 cup diced watermelon
- 1/2 cup diced pineapple
Instructions:
1. Preheat the grill to medium-high heat.
2. Place the potatoes and mushrooms in a large bowl. Add the salt and olive oil, and mix until everything is evenly coated.
3. Place the potato and mushroom mixture onto the preheated grill. Grill for 8-10 minutes, stirring occasionally, until the potatoes are tender and lightly browned.
4. Remove the potatoes and mushrooms from the grill and place them in a large bowl. Add the tomato, pepper, cucumber, watermelon, and pineapple.
5. Mix everything together until evenly combined. Serve warm or cold. Enjoy!
