Grilled Shrimp with Zucchini and Potatoes
Ingredients:
-1 lb. large shrimp, peeled and deveined
-2 medium zucchini, sliced into 1/2-inch thick rounds
-2 tablespoons olive oil
-1/2 cup bread crumbs
-1/2 cup cherry tomatoes, halved
-2 medium potatoes, cut into 1/2-inch cubes
-Salt and pepper, to taste
Instructions:
1. Preheat the grill to medium-high heat.
2. In a large bowl, combine the shrimp, zucchini, olive oil, bread crumbs, cherry tomatoes, potatoes, salt, and pepper. Toss to combine.
3. Place the shrimp and vegetables on the preheated grill. Cook for 4-5 minutes, flipping once, until the shrimp is cooked through and the vegetables are tender.
4. Serve the grilled shrimp and vegetables warm. Enjoy!
