Grilled Tuna and Eggplant with Avocado Salsa
Ingredients:
- 2 (6-ounce) tuna steaks
- 1 large eggplant, cut into 1/2-inch slices
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 ripe avocado, diced
- 1/4 cup diced red onion
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon extra-virgin olive oil
Instructions:
1. Preheat the grill to medium-high heat.
2. Brush the tuna steaks and eggplant slices with olive oil and season with salt and pepper.
3. Grill the tuna steaks and eggplant slices for 4-5 minutes per side, or until cooked through.
4. Meanwhile, in a small bowl, combine the avocado, red onion, cilantro, lime juice, and extra-virgin olive oil. Mix until combined.
5. Serve the grilled tuna and eggplant with the avocado salsa. Enjoy!
