Grilled Vegetable and Fruit Skewers with Anchovies

Ingredients:

- 1 large carrot, cut into 1-inch cubes
- 1 large zucchini, cut into 1-inch cubes
- 1 teaspoon paprika
- 1 cup pineapple chunks
- 1 cup apricot halves
- 8 anchovy fillets, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Preheat the grill to medium-high heat.

2. In a medium bowl, combine the carrot cubes, zucchini cubes, paprika, pineapple chunks, apricot halves, anchovy fillets, olive oil, salt, and pepper. Mix until all the ingredients are evenly coated.

3. Thread the vegetables and fruit onto metal skewers, alternating between the different ingredients.

4. Place the skewers on the preheated grill and cook for 8-10 minutes, turning occasionally, until the vegetables and fruit are lightly charred and cooked through.

5. Serve the skewers hot, with extra anchovy fillets if desired. Enjoy!
