Grilled Veggie and Mozzarella Sandwich

Ingredients:

- 2 slices of sourdough bread
- 2 tablespoons of olive oil
- 1/2 cup of shredded mozzarella cheese
- 1/2 cup of sliced tomatoes
- 1/2 cup of fresh spinach leaves
- 1/2 cup of sliced zucchini
- 1/4 cup of sliced fennel

Instructions:

1. Preheat a grill or grill pan to medium-high heat.

2. Brush both sides of the bread slices with olive oil.

3. Place the bread slices on the preheated grill and cook for 2-3 minutes per side, or until lightly toasted.

4. Remove the bread from the grill and top one slice with the mozzarella cheese, tomatoes, spinach, zucchini, and fennel.

5. Place the remaining slice of bread on top and press down lightly.

6. Return the sandwich to the grill and cook for 3-4 minutes per side, or until the cheese is melted and the vegetables are lightly charred.

7. Remove the sandwich from the grill and cut in half. Serve warm. Enjoy!
