Grilled Zucchini and Chicken Skewers
Ingredients:
- 2 zucchinis, cut into 1-inch cubes
- 2 boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 onion, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
Instructions:
1. Preheat an outdoor grill to medium-high heat.
2. In a large bowl, combine the zucchini cubes, chicken cubes, and onion cubes. Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss to combine.
3. Thread the zucchini, chicken, and onion cubes onto skewers, alternating between the ingredients.
4. Place the skewers on the preheated grill and cook for 8-10 minutes, flipping once, until the chicken is cooked through and the vegetables are tender.
5. Serve the skewers hot. Enjoy!
