Grilled Zucchini with Balsamic Glaze and Feta
Ingredients:
-2 medium zucchini, sliced into 1/2 inch thick rounds
-2 tablespoons balsamic vinegar
-1 tablespoon olive oil
-1/4 teaspoon salt
-1/4 teaspoon freshly ground black pepper
-1/4 cup crumbled feta cheese
Instructions:
1. Preheat a grill or grill pan to medium-high heat.
2. In a medium bowl, combine the zucchini slices, balsamic vinegar, olive oil, salt, and pepper. Toss to coat the zucchini evenly.
3. Place the zucchini slices on the preheated grill or grill pan. Cook for 3-4 minutes per side, or until the zucchini is tender and lightly charred.
4. Transfer the grilled zucchini to a serving plate. Drizzle with the remaining balsamic vinegar and sprinkle with the feta cheese. Serve immediately. Enjoy!
