Halloumi Pesto Pasta
Ingredients:
- 8 ounces of your favorite pasta
- 1/2 cup pesto
- 8 ounces halloumi, cubed
- 1/2 cup feta cheese, crumbled
- 2 eggs, lightly beaten
- 2 tomatoes, diced
- 1/2 cup cooked beans
Instructions:
1. Cook the pasta according to package instructions.
2. In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the halloumi cubes and cook until golden brown, about 3 minutes.
3. Add the pesto, tomatoes, and beans to the skillet and stir to combine. Cook for another 3 minutes.
4. Add the cooked pasta to the skillet and stir to combine.
5. Reduce the heat to low and add the eggs. Stir to combine and cook until the eggs are cooked through, about 3 minutes.
6. Add the feta cheese and stir to combine.
7. Serve the halloumi pesto pasta warm. Enjoy!
