Ham and Cheese Zucchini Bake
Ingredients:
-2 large zucchini, sliced into 1/4 inch thick rounds
-3 tablespoons butter
-3 tablespoons all-purpose flour
-1 cup milk
-1/2 cup sour cream
-2 eggs
-2 tablespoons Dijon mustard
-1/2 cup diced ham
-1/2 cup shredded cheese
-1/2 cup diced tomatoes
Instructions:
1. Preheat oven to 350°F.
2. Grease a 9x13 inch baking dish.
3. Arrange the zucchini slices in the baking dish.
4. In a medium saucepan, melt the butter over medium heat.
5. Add the flour and whisk until combined.
6. Slowly add the milk, whisking constantly until the mixture is smooth.
7. Add the sour cream, eggs, and mustard, whisking until combined.
8. Pour the mixture over the zucchini slices.
9. Sprinkle the ham, cheese, and tomatoes over the top.
10. Bake for 30-35 minutes, or until the top is golden brown and the zucchini is tender.
11. Serve warm. Enjoy!
