Ham and Fennel Hash with Orange and Pineapple
Ingredients:
- 2 tablespoons olive oil
- 2 cups diced ham
- 1 large fennel bulb, diced
- 2 large potatoes, peeled and diced
- 1/2 cup diced pineapple
- 1/4 cup crumbled feta cheese
- 2 oranges, peeled and diced
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the ham and fennel and cook, stirring occasionally, until the ham is lightly browned and the fennel is softened, about 5 minutes.
3. Add the potatoes and cook, stirring occasionally, until the potatoes are tender, about 10 minutes.
4. Add the pineapple, feta cheese, and oranges and cook, stirring occasionally, until the pineapple is softened, about 5 minutes.
5. Season with salt and pepper, to taste.
6. Serve warm. Enjoy!
