Ham and Potato Salad

Ingredients:

- 2 cups cooked ham, diced
- 2 cups mashed potatoes
- 2 cups salad greens
- 1/2 cup pickles, diced
- 1/2 cup plain soy yogurt
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- Salt and pepper, to taste

Instructions:

1. In a large bowl, combine the diced ham, mashed potatoes, salad greens, and pickles.

2. In a small bowl, whisk together the soy yogurt, olive oil, and Dijon mustard until combined.

3. Pour the dressing over the salad and toss to combine.

4. Season with salt and pepper, to taste.

5. Serve chilled or at room temperature. Enjoy!
