Harissa Chicken and Rice

Ingredients:

- 2 cups of uncooked white rice
- 1 can of white beans, drained and rinsed
- 4 cups of chicken stock
- 2 tablespoons of harissa paste
- 1 apple, peeled and diced
- 2 carrots, peeled and diced
- 2 tablespoons of all-purpose flour
- 1 cup of plain yoghurt

Instructions:

1. In a large pot, combine the rice, white beans, chicken stock, and harissa paste. Bring to a boil over high heat, then reduce to a simmer.

2. Add the diced apple and carrots to the pot and simmer for 15 minutes, or until the rice is cooked through.

3. In a small bowl, whisk together the flour and yoghurt until smooth.

4. Slowly pour the yoghurt mixture into the pot and stir to combine. Simmer for an additional 5 minutes, stirring occasionally.

5. Serve the harissa chicken and rice warm. Enjoy!
