Harissa Chickpea and Vegetable Rice Bowl
Ingredients:
- 2 cups cooked rice
- 1 can chickpeas, drained and rinsed
- 2 tablespoons harissa paste
- 2 tablespoons olive oil
- 1 cup sliced mushrooms
- 1 cup diced courgette
- 1 cup chopped kale
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the mushrooms and courgette and cook until softened, about 5 minutes.
3. Add the chickpeas and harissa paste and cook for another 2 minutes.
4. Add the kale and cook until wilted, about 2 minutes.
5. Add the cooked rice and stir to combine.
6. Season with salt and pepper to taste.
7. Serve warm.
