Healthy Chicken and Vegetable Stir Fry

Ingredients:

- 2 tablespoons of olive oil
- 2 boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 cloves of garlic, minced
- 1 red bell pepper, cut into thin strips
- 1 green bell pepper, cut into thin strips
- 1 cup of broccoli florets
- 1 cup of snow peas
- 1/4 cup of low-sodium soy sauce
- 1 tablespoon of honey
- 1 teaspoon of sesame oil
- 1 teaspoon of rice vinegar
- 1 teaspoon of freshly grated ginger
- 1/4 teaspoon of red pepper flakes

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the chicken cubes and cook until golden brown on all sides, about 5 minutes.

3. Add the garlic, bell peppers, broccoli, and snow peas. Cook for an additional 3 minutes, stirring often.

4. In a small bowl, whisk together the soy sauce, honey, sesame oil, rice vinegar, ginger, and red pepper flakes.

5. Pour the sauce over the chicken and vegetables and stir to combine.

6. Reduce the heat to low and simmer for 5 minutes, stirring occasionally.

7. Serve over cooked brown rice or quinoa. Enjoy!
