Healthy Chicken Penne Pasta

Ingredients:

- 2 chicken breasts
- 1 head of broccoli
- 2 carrots, peeled and chopped
- 1 onion, diced
- 2 cups of penne pasta
- 1 jar of red sauce
- 2 slices of wholemeal bread
- 1 avocado, diced

Instructions:

1. Preheat the oven to 350°F (175°C).

2. Place the chicken breasts in a baking dish and season with salt and pepper. Bake in the preheated oven for 25 minutes.

3. Meanwhile, bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions.

4. Heat a large skillet over medium-high heat. Add the onions, carrots, and broccoli and cook for 5 minutes, stirring occasionally.

5. Add the red sauce to the skillet and stir to combine. Simmer for 10 minutes.

6. Once the chicken is cooked, remove it from the oven and let it cool. Once cool, shred the chicken with two forks.

7. Add the shredded chicken to the skillet and stir to combine. Simmer for an additional 5 minutes.

8. Drain the cooked pasta and add it to the skillet. Stir to combine and cook for an additional 5 minutes.

9. Serve the pasta with a slice of wholemeal bread and diced avocado. Enjoy!
