Recipe Name: Herb-Crusted Rack of Lamb

Ingredients:
- 1 rack of lamb, frenched
- 2 tablespoons Dijon mustard
- 2 cloves of garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil

Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a small bowl, mix together the Dijon mustard, minced garlic, chopped rosemary, thyme, parsley, salt, and pepper.
3. Rub the herb mixture all over the rack of lamb, ensuring it is evenly coated.
4. Heat olive oil in an oven-safe skillet over medium-high heat.
5. Sear the rack of lamb in the skillet for 2-3 minutes on each side until browned.
6. Transfer the skillet to the preheated oven and roast the lamb for about 20-25 minutes for medium-rare doneness, or longer if desired.
7. Remove the lamb from the oven and let it rest for 5-10 minutes before slicing and serving.
