Ingredients:
- 1 cup cooked quinoa
- 2 eggs
- 1/2 avocado, sliced
- 1/4 cup diced tomatoes
- 1/4 cup diced cucumber
- 1/4 cup diced red bell pepper
- 1/4 cup crumbled feta cheese
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste

Step-by-Step Guide:

1. Cook the quinoa according to package instructions. Once cooked, set aside.

2. In a small saucepan, bring water to a boil. Gently add the eggs and let them boil for 6-7 minutes for a soft-boiled consistency or longer if you prefer a harder yolk. Once done, remove the eggs from the saucepan and place them in a bowl of cold water to cool down.

3. In a serving bowl, add the cooked quinoa as the base.

4. Peel the cooled eggs and cut them in half. Place the egg halves on top of the quinoa.

5. Arrange the sliced avocado, diced tomatoes, cucumber, and red bell pepper around the eggs.

6. Sprinkle the crumbled feta cheese over the bowl.

7. Garnish with chopped fresh parsley.

8. Season with salt and pepper to taste.

9. Serve immediately and enjoy your high protein breakfast bowl!
