High Protein Savory Breakfast Bowl

Ingredients:

-1/2 cup cooked quinoa
-1/4 cup diced red onion
-1/4 cup diced bell pepper
-1/4 cup diced mushrooms
-1/4 cup diced tomatoes
-1/4 cup cooked black beans
-1/4 cup cooked corn
-1/4 cup shredded cheese
-1/4 cup diced avocado
-2 tablespoons olive oil
-Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the diced red onion, bell pepper, mushrooms, and tomatoes. Cook for 5 minutes, stirring occasionally.

3. Add the cooked quinoa, black beans, and corn. Cook for an additional 5 minutes, stirring occasionally.

4. Add the shredded cheese and diced avocado. Cook for an additional 2 minutes, stirring occasionally.

5. Season with salt and pepper to taste.

6. Serve the savory breakfast bowl warm. Enjoy!
