Honey-Lime Baked Salmon with Acorn Squash and Ricotta
Ingredients:
- 2 salmon fillets
- 2 cups cooked white rice
- 1 acorn squash, halved and seeded
- 1/2 cup ricotta cheese
- 1/4 cup chopped walnuts
- 1 diced apple
- 1 tablespoon chopped fresh basil
- 1 teaspoon chopped fresh thyme
- Salt and pepper, to taste
- 2 eggs, lightly beaten
- 2 tablespoons honey
- Juice of 1 lime
Instructions:
1. Preheat oven to 350 degrees F.
2. Place the acorn squash halves cut-side up on a baking sheet and bake for 25 minutes, or until tender.
3. Meanwhile, season the salmon fillets with salt and pepper.
4. In a small bowl, combine the ricotta cheese, walnuts, apple, basil, thyme, eggs, honey, and lime juice. Mix until well combined.
5. Remove the squash from the oven and fill each half with the ricotta mixture. Place the salmon fillets on top of the ricotta mixture.
6. Bake for 25 minutes, or until the salmon is cooked through.
7. Serve the salmon and squash over the cooked rice. Enjoy!
