Honey Mustard Chicken and Rice

Ingredients:

- 2 cups cooked white rice

- 2 boneless, skinless chicken breasts, cut into cubes

- 1 red chili pepper, diced
- 1/2 pound ground beef
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 1 onion, diced
- 1/2 teaspoon black pepper
- 1/4 teaspoon peppermint extract
- 1 tablespoon sugar
- 2 apples, cored and diced
- 2 potatoes, peeled and diced
- 2 carrots, peeled and diced

Instructions:

1. Preheat oven to 375°F.

2. In a large bowl, combine the cooked rice, chicken cubes, chili pepper, ground beef, mustard, honey, onion, black pepper, peppermint extract, and sugar. Mix until all ingredients are evenly distributed.

3. Spread the mixture into a 9x13 inch baking dish.

4. Top with the apples, potatoes, and carrots.

5. Bake in preheated oven for 30 minutes, or until chicken is cooked through and vegetables are tender.

6. Serve hot. Enjoy!
