Recipe: Honey Roasted Carrots with Dates and Hazelnuts

Ingredients:
- 1 pound of carrots, peeled and cut into 2-inch pieces
- 1/4 cup of honey
- 2 tablespoons of olive oil
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 cup of pitted dates, chopped
- 1/4 cup of hazelnuts, roughly chopped
- Fresh parsley, for garnish (optional)

Step-by-step guide:

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. In a large bowl, combine the honey, olive oil, salt, and black pepper. Mix well until the ingredients are thoroughly combined.

3. Add the carrots to the bowl and toss them in the honey mixture until they are well coated.

4. Transfer the carrots to the prepared baking sheet, spreading them out in a single layer.

5. Roast the carrots in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized. Make sure to stir them halfway through the cooking time to ensure even roasting.

6. While the carrots are roasting, heat a small skillet over medium heat. Add the chopped hazelnuts and toast them for about 3-4 minutes, stirring occasionally, until they become fragrant and lightly golden. Remove from heat and set aside.

7. Once the carrots are done, remove them from the oven and let them cool slightly.

8. Transfer the roasted carrots to a serving dish and sprinkle the chopped dates and toasted hazelnuts over the top.

9. If desired, garnish with fresh parsley for added freshness and color.
