Huevos Rancheros
Ingredients:
- 2 large eggs
- 2 medium potatoes, diced
- 1/2 cup shredded cheese
- 1/2 cup diced tomatoes
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. In a medium bowl, combine the diced potatoes, olive oil, salt, and pepper. Spread the mixture onto a baking sheet and bake for 20 minutes, or until potatoes are tender.
3. Meanwhile, in a medium skillet, heat the diced tomatoes over medium-high heat. Cook for 5 minutes, stirring occasionally.
4. Once the potatoes are done, reduce the heat to medium-low and add the eggs to the skillet. Cook for 2 minutes, or until the whites are set.
5. Sprinkle the shredded cheese over the eggs and top with the potatoes. Bake for 5 minutes, or until the cheese is melted.
6. Serve the huevos rancheros with diced tomatoes and enjoy!
