Recipe Name: Huevos Rancheros
Ingredients:
- 4 eggs
- 1 cup of shredded queso fresco
- 2 tomatoes, diced
- 4 slices of jamón (ham)
- Salt and pepper to taste
- 1 tablespoon of olive oil
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced tomatoes and cook for 2-3 minutes until they start to soften.
3. Push the tomatoes to the side of the skillet and add the jamón slices. Cook for 1-2 minutes on each side until slightly crispy.
4. Crack the eggs into the skillet, season with salt and pepper, and cook to your desired doneness.
5. Sprinkle the shredded queso fresco over the eggs and cover the skillet with a lid to melt the cheese.
6. Once the cheese is melted, remove the skillet from heat.
7. Serve the Huevos Rancheros hot with a side of tortillas or toast.
