Make Indian-Inspired Poutine (Vegetarian)

Ingredients:
- 4 large potatoes, cut into fries
- 1 cup paneer, cubed
- 1/2 cup green peas
- 1/2 cup corn kernels
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1/2 tsp red chili powder
- Salt to taste
- Oil for frying
- 2 cups vegetable broth
- 2 tbsp cornstarch
- Fresh cilantro for garnish
Instructions:
1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Spread the potato fries on the baking sheet, drizzle with oil, and season with salt. Bake for 30-35 minutes or until crispy.
3. In a large skillet, heat some oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
4. Add the onions and garlic, sauté until translucent.
5. Add the paneer, green peas, and corn kernels. Cook for 5-7 minutes until the vegetables are tender.
6. Add the turmeric powder, garam masala, red chili powder, and salt. Mix well to combine.
7. In a separate bowl, whisk together the vegetable broth and cornstarch until smooth. Pour this mixture into the skillet and stir continuously until the gravy thickens.
8. To assemble the poutine, place a layer of the baked fries on a serving plate. Top with the paneer and vegetable mixture. Drizzle with the gravy.
