Indian-Style Curry Mashed Potato Bowl

Ingredients:

- 2 cups of cooked mashed potatoes
- 1 cup of roasted Indian cauliflower
- 1 cup of cooked chickpeas
- 2 cups of fresh spinach
- 1/4 cup of cilantro mint chutney
- 1/4 cup of pickled onions

Instructions:

1. Preheat oven to 375°F.

2. Place the cauliflower on a baking sheet and roast for 20 minutes.

3. Meanwhile, heat a large skillet over medium heat and add the cooked mashed potatoes.

4. Cook for 5 minutes, stirring occasionally.

5. Add the cooked chickpeas and spinach and cook for another 5 minutes.

6. Add the cilantro mint chutney and pickled onions and stir to combine.

7. Serve the curry mashed potatoes in individual bowls, topped with the roasted Indian cauliflower. Enjoy!
