Indian-Style Potato and Bacon Hash

Ingredients:

- 2 tablespoons butter
- 1 onion, diced
- 2 potatoes, peeled and diced
- 4 strips of beef bacon, diced
- 1 egg
- 1 apple, diced
- 1 avocado, diced
- Salt and pepper, to taste
- 1 teaspoon sugar
- 1 teaspoon red chilli powder
- 1 teaspoon turmeric
- 1 teaspoon garam masala

Instructions:

1. In a large skillet over medium-high heat, melt the butter.

2. Add the onion and potatoes and cook, stirring occasionally, until the onion is softened and the potatoes are lightly browned, about 8 minutes.

3. Add the bacon and cook, stirring occasionally, until the bacon is lightly browned, about 5 minutes.

4. Push the mixture to one side of the skillet and crack the egg into the empty side. Cook until the egg is set, about 3 minutes.

5. Add the apple, avocado, salt, pepper, sugar, red chilli powder, turmeric, and garam masala. Stir to combine.

6. Cook, stirring occasionally, until the potatoes are tender and the mixture is heated through, about 5 minutes.

7. Serve warm. Enjoy!
