Indian-Style Salmon and Rice
Ingredients:
- 2 tablespoons olive oil
- 1 shallot, diced
- 1 can coconut milk
- 2 tablespoons tomato paste
- 1 cup long-grain white rice
- 2 green onions, chopped
- 1 cup chicken stock
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 bell pepper, diced
- 2 salmon fillets
- 1 teaspoon paprika
- 1 teaspoon smoked paprika
- 1 teaspoon Garam masala
- 2 eggs, lightly beaten
- Salt, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the shallot and cook until softened, about 5 minutes.
2. Add the coconut milk, tomato paste, rice, green onions, chicken stock, green beans, and bell pepper. Stir to combine and bring to a boil.
3. Reduce the heat to low, cover, and simmer for 15 minutes.
4. Meanwhile, season the salmon fillets with the paprika, smoked paprika, Garam masala, and salt.
5. When the rice is nearly done, add the salmon fillets to the skillet and pour the eggs over the top. Cover and cook for an additional 5 minutes, or until the salmon is cooked through.
6. Serve the salmon and rice with a sprinkle of green onions. Enjoy!
