Ingredients:
-3 large eggs
-1/4 cup of chopped greens (spinach, kale, etc.)
-1/4 cup of diced onion
-1 tablespoon of butter
-Salt and pepper to taste
Instructions:
1. Crack the eggs into a bowl and whisk until combined.
2. Heat a non-stick skillet over medium heat and melt the butter.
3. Add the onions and sauté until softened, about 3 minutes.
4. Add the greens and cook for another 2 minutes.
5. Pour the egg mixture into the skillet and season with salt and pepper.
6. Cook for 2 minutes, stirring occasionally.
7. Flip the omelet and cook for another 2 minutes.
8. Serve the omelet with the greens and enjoy!
