Ingredients:
-1 cup all-purpose flour
-1/2 cup whole wheat flour
-1 teaspoon baking powder
-1/2 teaspoon baking soda
-1/2 teaspoon salt
-1/4 cup olive oil
-1/2 cup plain Greek yogurt
-1/2 cup honey
-1/2 cup feta cheese, crumbled
-1/2 cup sun-dried tomatoes, chopped
-1/2 cup kalamata olives, chopped
-1/2 cup fresh basil, chopped
-1/2 cup fresh oregano, chopped
Instructions:
1. Preheat oven to 350°F. Grease a 12-cup muffin tin with cooking spray.
2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
3. In a separate bowl, whisk together the olive oil, Greek yogurt, and honey until combined.
4. Pour the wet ingredients into the dry ingredients and stir until just combined.
5. Fold in the feta cheese, sun-dried tomatoes, kalamata olives, basil, and oregano.
6. Divide the batter evenly among the muffin cups.
7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
8. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
