Ingredients:
-4 boneless, skinless chicken breasts
-1 cup cooked black beans
-1 cup cooked corn
-1 cup shredded cheddar cheese
-1/2 cup salsa
-1 teaspoon chili powder
-1 teaspoon cumin
-1 teaspoon garlic powder
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1 tablespoon olive oil
Instructions:
1. Preheat oven to 350 degrees F.
2. Place chicken breasts on a cutting board and use a sharp knife to cut a pocket into each breast.
3. In a medium bowl, combine black beans, corn, cheese, salsa, chili powder, cumin, garlic powder, salt, and pepper.
4. Stuff each chicken breast with the mixture, making sure to evenly distribute the filling.
5. Heat olive oil in a large skillet over medium-high heat.
6. Place chicken breasts in the skillet and cook for 3-4 minutes per side, or until golden brown.
7. Transfer chicken breasts to a baking dish and bake in preheated oven for 20-25 minutes, or until chicken is cooked through.
