Ingredients:

- 2 cups of basmati rice
- 2 tablespoons of olive oil
- 1 large onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of ground ginger
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of turmeric
- 1 teaspoon of garam masala
- 1/2 teaspoon of cayenne pepper
- 2 cups of diced chicken
- 1/2 cup of frozen peas
- 1/2 cup of diced carrots
- 1/2 cup of diced bell peppers
- 1/2 cup of diced tomatoes
- 1/2 cup of plain yogurt
- 1/2 cup of water
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.

3. Add the ginger, cumin, coriander, turmeric, garam masala, and cayenne pepper and stir to combine.

4. Add the diced chicken and cook until the chicken is cooked through.

5. Add the frozen peas, carrots, bell peppers, and tomatoes and stir to combine.

6. Add the yogurt and water and stir to combine.

7. Add the basmati rice and stir to combine.

8. Season with salt and pepper to taste.

9. Transfer the mixture to a greased baking dish and cover with foil.

10. Bake for 25 minutes.

11. Remove from the oven and let sit for 10 minutes before serving. Enjoy!
