-1 tablespoon olive oil
-1/2 cup diced onion
-2 cloves garlic, minced
-1 cup Arborio rice
-2 cups chicken broth
-1/2 cup white wine
-1/2 cup grated Parmesan cheese
-Salt and pepper to taste

Instructions:

1. Set the Instant Pot to the sauté setting. Add the olive oil, onion, and garlic and cook for 3-4 minutes, stirring occasionally, until the onion is softened.

2. Add the Arborio rice and stir to combine. Cook for 1-2 minutes, stirring occasionally.

3. Pour in the chicken broth and white wine and stir to combine.

4. Secure the lid on the Instant Pot and set the valve to sealing. Set the Instant Pot to high pressure for 8 minutes.

5. When the cooking time is complete, quick release the pressure.

6. Stir in the Parmesan cheese and season with salt and pepper to taste.

7. Serve the risotto warm and enjoy!
