Ingredients:
- 2 boneless, skinless chicken breasts
- 8 ounces of penne pasta
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1/2 cup of heavy cream
- 1/4 cup of freshly squeezed lemon juice
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of freshly grated Parmesan cheese
Instructions:
1. Preheat oven to 375 degrees F.
2. Place chicken breasts in a baking dish and season with salt and pepper. Bake for 20 minutes or until cooked through.
3. Meanwhile, bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions.
4. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute.
5. Add the heavy cream, lemon juice, salt, and pepper. Simmer for 5 minutes.
6. Add the cooked pasta to the skillet and stir to combine.
7. Slice the cooked chicken and add to the skillet.
8. Sprinkle with Parmesan cheese and stir to combine.
9. Serve warm. Enjoy!
