Ingredients:
- 2 cups of achu (a type of African grain)
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of paprika
- 1 teaspoon of turmeric
- 1/2 teaspoon of ground ginger
- 1/2 teaspoon of ground black pepper
- 1/2 teaspoon of salt
- 1/2 cup of vegetable broth
Instructions:
1. Heat the olive oil in a large saucepan over medium heat.
2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
3. Add the achu and stir to combine.
4. Add the cumin, coriander, paprika, turmeric, ginger, black pepper, and salt. Stir to combine.
5. Add the vegetable broth and bring to a boil.
6. Reduce the heat to low and simmer, covered, for 20 minutes, stirring occasionally.
7. Remove from the heat and let sit for 5 minutes before serving. Enjoy!
