Ingredients:
- 4 eggs
- 2 tablespoons of butter
- 1 tablespoon of olive oil
- 2 tablespoons of chopped chives
- Salt and pepper, to taste
Instructions:
1. Crack the eggs into a bowl and whisk until combined.
2. Heat a non-stick pan over medium heat and add the butter and olive oil.
3. Once the butter has melted, add the eggs and stir continuously with a wooden spoon.
4. When the eggs begin to scramble, add the chives and season with salt and pepper.
5. Continue to stir until the eggs are cooked through, about 3-4 minutes.
