Ingredients:
-1 lb beef tripe
-1 onion, diced
-2 cloves garlic, minced
-2 tablespoons olive oil
-2 tablespoons tomato paste
-1 teaspoon paprika
-1 teaspoon ground black pepper
-1 teaspoon dried oregano
-1 teaspoon dried thyme
-1 bay leaf
-2 quarts beef broth
-1 cup white rice
-1/2 cup sour cream
-1/4 cup chopped fresh parsley
Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the tomato paste, paprika, black pepper, oregano, thyme, and bay leaf. Stir to combine and cook for 1 minute.
3. Add the beef tripe and beef broth and bring to a boil. Reduce the heat to low and simmer for 1 hour.
4. Add the white rice and simmer for an additional 20 minutes.
5. Remove the bay leaf and discard.
6. Stir in the sour cream and parsley.
7. Serve hot. Enjoy!
