Ingredients:

-1 lb boneless, skinless chicken breasts, cut into cubes
-2 tablespoons vegetable oil
-1 onion, diced
-2 cloves garlic, minced
-2 teaspoons garam masala
-1 teaspoon ground cumin
-1 teaspoon ground coriander
-1/2 teaspoon ground turmeric
-1/4 teaspoon cayenne pepper
-1 (14.5 ounce) can diced tomatoes
-1/2 cup heavy cream
-4 tablespoons butter
-Salt and pepper, to taste

Instructions:

1. Heat the oil in a large skillet over medium-high heat.

2. Add the chicken cubes and cook until lightly browned, about 5 minutes.

3. Add the onion and garlic and cook until the onion is softened, about 5 minutes.

4. Add the garam masala, cumin, coriander, turmeric, and cayenne pepper and cook for 1 minute.

5. Add the diced tomatoes and cook for 5 minutes.

6. Reduce the heat to low and add the heavy cream and butter. Simmer for 10 minutes.

7. Season with salt and pepper, to taste.

8. Serve over cooked basmati rice. Enjoy!
