Ingredients:
-1 lb. of penne pasta
-2 bunches of broccolini, trimmed and cut into 1-inch pieces
-1/4 cup of olive oil
-2 cloves of garlic, minced
-1/4 teaspoon of red pepper flakes
-1/2 cup of heavy cream
-1/2 cup of grated Parmesan cheese
-1/4 cup of toasted breadcrumbs
-1 teaspoon of chili powder
-Salt and pepper to taste
Instructions:
1. Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, about 10 minutes.
2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the broccolini and garlic and cook, stirring occasionally, until the broccolini is tender, about 5 minutes.
3. Add the red pepper flakes, heavy cream, Parmesan cheese, and chili powder to the skillet and stir to combine. Simmer until the sauce is thick and creamy, about 5 minutes.
4. Drain the pasta and add it to the skillet. Toss to combine.
5. Transfer the pasta to a serving dish and top with the toasted breadcrumbs. Season with salt and pepper to taste. Serve warm. Enjoy!
