Israeli Salad with Fried Onions

Ingredients:

2 large onions, sliced

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups cooked Israeli couscous

2 cups diced tomatoes

1/2 cup diced cucumber

1/2 cup diced red bell pepper

1/4 cup chopped fresh parsley

2 tablespoons chopped fresh mint

2 tablespoons chopped fresh dill

2 tablespoons freshly squeezed lemon juice

2 tablespoons extra-virgin olive oil

Directions:

1. Heat the olive oil in a large skillet over medium heat. Add the onions and garlic and cook, stirring occasionally, until the onions are golden brown and caramelized, about 10 minutes.

2. Add the salt and pepper and cook for an additional minute.

3. In a large bowl, combine the couscous, tomatoes, cucumber, bell pepper, parsley, mint, dill, lemon juice, and extra-virgin olive oil.

4. Add the fried onions and stir to combine.

5. Serve the salad warm or at room temperature.
