Italian Sausage and Rice Skillet
Ingredients:
- 2 tablespoons olive oil
- 1 pound Italian sausage, casings removed
- 2 bell peppers, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked white rice
- 1 14.5-ounce can diced tomatoes
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it up with a wooden spoon, until browned, about 5 minutes.
2. Add the bell peppers, garlic, Italian seasoning, salt, and pepper and cook, stirring occasionally, until the bell peppers are softened, about 5 minutes.
3. Add the cooked white rice and diced tomatoes and stir to combine. Cook until heated through, about 5 minutes.
4. Remove the skillet from the heat and stir in the Parmesan cheese and fresh basil. Serve warm.
