Jalapeño Mac and Cheese Chicken Cutlets
Ingredients:
- 4 chicken cutlets
- 2 jalapeños, diced
- 2 cups macaroni
- 2 cups shredded cheese
- 1/2 cup pickles, diced
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup milk
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. Place chicken cutlets in a baking dish and season with salt and pepper. Bake for 20 minutes or until cooked through.
3. Meanwhile, cook macaroni according to package instructions.
4. In a medium saucepan, melt butter over medium heat. Add flour and whisk until combined. Slowly add milk, whisking constantly until mixture is thick and bubbly.
5. Add garlic powder, onion powder, salt and pepper, and stir.
6. Add cheese and stir until melted.
7. Add cooked macaroni and diced jalapeños and stir until combined.
8. Remove chicken cutlets from the oven and top with macaroni and cheese mixture. Sprinkle with diced pickles.
9. Bake for 15 minutes or until cheese is melted and bubbly.
10. Serve hot and enjoy!
