Jamaican Jerk BBQ Shrimp with Rice and Beans

Ingredients:

-1 lb. shrimp, peeled and deveined
-1/2 cup BBQ jerk sauce
-1/2 teaspoon granulated garlic
-1/2 teaspoon granulated onion
-1/2 teaspoon thyme
-1/2 scotch bonnet pepper, finely diced
-1/2 cup long grain white rice
-1/2 cup kidney beans, cooked
-1/2 cup collard greens, chopped
-1/2 cup purple cabbage, shredded
-2 green onions, chopped

Instructions:

1. Preheat oven to 375 degrees F.

2. In a large bowl, combine the shrimp, BBQ jerk sauce, granulated garlic, granulated onion, thyme, and scotch bonnet pepper. Mix until the shrimp is evenly coated.

3. Spread the shrimp mixture onto a baking sheet and bake for 15 minutes, or until shrimp is cooked through.

4. Meanwhile, in a medium saucepan, bring 1 cup of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15 minutes.

5. Once the rice is cooked, stir in the kidney beans, collard greens, purple cabbage, and green onions.

6. Serve the jerk BBQ shrimp over the rice and beans. Enjoy!
