Japanese Sweet Potato Curry


- 2 Japanese sweet potatoes, peeled and diced
- 2 tablespoons of curry paste
- 2 green onions, chopped
- 1 can of chickpeas, drained and rinsed
- 2 shallots, diced
- 2 cups of chicken broth


1. Heat a large pot over medium-high heat.

2. Add the shallots and cook until softened, about 2 minutes.

3. Add the curry paste and stir to combine.

4. Add the diced sweet potatoes and stir to coat with the curry paste.

5. Pour in the chicken broth and bring to a boil.

6. Reduce the heat to low and simmer for 10 minutes, or until the sweet potatoes are tender.

7. Add the chickpeas and green onions and simmer for an additional 5 minutes.

8. Serve hot with your favorite accompaniments. Enjoy!
